Eliminating Trans Fats - Another Government Mandate?

by guest blogger Jody Perrecone

Last week the FDA took initial steps that will eliminate trans fats from all foods.  Food scientists and others can respond to this mandate to the FDA over the next 60 days.  This will help the FDA determine when to phase out all trans fats since manufacturers may need to reformulate some of their products. After that, food manufacturers will need to petition the FDA to allow trans fats in a particular product.

By forcing hydrogen atoms into vegetable oil and changing its molecular structure, trans fats are created. This saturates the oils and makes them solid. Trans fats improve the texture and extend the shelf life of manufactured food products. (Have you ever seen a moldy Twinkie?) Among the foods trans fats are commonly found in are frozen pizzas, frostings, popcorn, snack foods, crackers, pizza and cookie dough, stick margarine, cake mixes, fried foods, muffins, pies, cookies, and other baked goods. Most experts consider trans fats as the most damaging fat to our health. Clinical trials have shown trans fats to increase the risk of a heart attack and premature cardiovascular death. Our body metabolizes trans fats differently than other fats and is linked to liver dysfunction.

Take The Thanksgiving Challenge

by guest blogger Jody Perrecone

Remember when we sat down at the table as a family for dinner? When we bought local food?  When we knew the shop keepers?  When food was prepared by a person and didn’t come out of a box?

Maybe not all of us remember these times from not so long ago.  Somehow we have gotten away from our relationship with our food.  We have almost become alienated with our food and food sources. Often times we don’t know where our food came from or who (or what) made it.

Food Stamps And Fast Food

by guest blogger Cyndi Laurenti

There's a frightening trend sweeping the nation: allowing those on food assistance and food stamp programs to buy processed, prepackaged foods, including at fast food restaurants, as an alternative to using that assistance only at grocery stores. Despite the efforts of some states to restrict the types of junk food allowed to be purchased with food stamp or food assistance cards, more states are adopting the policy of letting recipients buy some of the unhealthiest foods on the market. However, for some these foods are simply the most economically viable option.

The Reality of the Situation

Unfortunately, fast food is often cheaper than high-quality or organic food. Because the budgets of families that receive food stamps must be counted out to the penny, a $5 meal at a fast food restaurant may seem like the only option when healthy and nutritious food from a grocery store may cost two or three times as much. With such limited income, the choice becomes less a matter of eating something healthy instead of a fast food hamburger and more an issue of simply trying to get the most food for the least amount of money.
