Forks Over Knives is the brilliant work of two legendary pioneers in our modern day healthcare system. One American biochemist, Dr. T. Colin Campbell, has over 50 years of distinguished work in the field of nutrition and health and one American surgeon, Dr. Caldwell Esselstyn, has worked tirelessly for decades at the world famous Cleveland Clinic to rid his patients of heart disease. I had the privilege of watching this film while on a recent trip to Houston, TX. I must say that it is provocative and forthright as it conveys the difficult to hear truth about what's causing the biggest epidemic of chronic illness that the western world has ever seen - our rich, high fat diet loaded with animal-based and processed foods.
The film provides a wealth of statistics about chronic disease rates and the financial & physical burden placed on our society due to these diseases. It also shows how we have literally become addicted to the very foods that promote these diseases. Dr. Doug Lisle speaks about the 'pleasure trap' that these addictive foods unknowingly thrust us in to and why this happens. Other experts such as Dr. John McDougall and Dr. Matthew Lederman join Dr. Esselstyn in sharing real life cases of patients that they've treated with a plant-based diet and how they've reversed cases of diabetes, heart disease, breast cancer and much more.
Dr. Campbell also speaks about how money flows between industry ties and government entities, such as the USDA and the National Academy of Sciences, setting up several conflicts of interests when it comes to our health, our nation's food production, and the scientific message that gets communicated to both the general public and the medical community. One of the most shocking revelations that Dr. Campbell eludes to is that America's healthcare costs could be reduced by 70-80% if we would adopt a whole foods, plant-based diet.
If you care at all about your health or your family or friend's health then this is a must see film! It's content is startling at times and yet skillfully conveyed. It's backed by several decades of solid scientific research that even the worst critic can't say would cause harm to those who adopt its approach. It doesn't make you feel guilty for eating the standard American diet. Instead, it makes you feel empowered to take back control of your own health as opposed to relying on the current regimen of pills and procedures that most doctors and healthcare practitioners depend on as they watch their patients get bigger and sicker by the day.
