The Skinny On Chef AJ's Book - Unprocessed

I read a lot about health and nutrition these days which is a good thing because I'm a healthcare practitioner.  And although nutrition isn't a large part of my everyday duties as a pharmacist it's certainly extremely important to one's overall health, and I realize that. Since I never received any training or education in regards to this during pharmacy school I've taken it upon myself to learn as much as I can about this subject on my own time.  The latest book to help fill in this gap is the wonderful work and product of Chef AJ.

Chef AJ has become one of my favorite culinary artists and is also a bit of a rockstar in the plant-based world.  She's brilliant in the kitchen and makes eating a whole foods, plant-based diet surprisingly simple and unbelievably delicious in her new book Unprocessed.  I guess that comes with the territory when you've got nearly 35 years of experience under your belt eating and preparing plant-based meals.  It wasn't always easy for Chef AJ though.





She starts off by sharing her lifelong journey on how she got to where she is today—a raw/vegan pastry chef who teaches others about the healing power of foods.  Chef AJ didn't begin her journey on some big health kick however.  She actually endured many difficult lessons as she consumed a vegetarian diet full of processed food in the beginning.  She lived off of what she terms as her four basic food groups: sugar, flour, oil, and caffeine.  This diet reeked havoc on her mind and body over the years.  Her story of battling anxiety, addictions, losing her baby, and battling a life threatening case of colon cancer are enough to bring anyone to tears.  It certainly tugged at my heart and made me realize just how precious and valuable our health can be.  You'll find her journey to becoming the poster child of healthy living today incredibly inspiring.


She also explains in very simple and easy to understand terms how to adopt an unprocessed lifestyle of eating nothing but plant-based, whole foods.  She even dedicates an entire chapter to debunking commons myths you may come across while adopting this new way of living and eating.  Chef AJ does a marvelous job of explaining why you need to cut the sugar, oil, and salt out of your diet in order to achieve your optimal weight and the health benefits that accompany it.  And she even gives some very useful practical tips on what to do when traveling or eating out so that you can stay unprocessed and keep your clean bill of health no matter what situation you find yourself in.


The best part of her whole book though is the recipes!  There's over 100 of them and they all share one thing in common... they're all completely and totally unprocessed.  Chef AJ uses nothing but the finest ingredients straight from the hands of Mother Nature.  She's got a section for all kinds of recipes including:

-  Salads & Dressings
-  Savory Soups
-  Sensational Sides


And did I mention the section for Decadent Desserts and another one for Truffles.  Talk about To Die For or rather To Live For!  I'm a sucker for sweets and Chef AJ is a master at this.  No wonder she's a professional pastry chef.


If you've always wanted to get healthy and lose those extra pounds then this is the perfect book for you.  If you need inspiration to get in the right mindset to make the leap of faith into the plant-based world then this is the book for you.  And most of all if you love tasty, sweet treats as much as I do and don't want to feel guilty about eating them then this is definitely the book for you!  Your life will be forever changed if you decide to make Chef AJ's book a staple in your kitchen.  It already has for me, and I can't wait to share her recipes with my family and friends.  I have a sneaking suspicion they just might become Chocolate FUNdue addicts just like me :)
